    I do a Roggenbier that's 45% rye malt, used about 3/4 pound of rice hulls and I gently stirred the mash often, no issues. My system uses an after market 500u basket with a DIY COFI style center sparge. You can also add a beta glucan rest to help make the mash less sticky, but I've never tried it.

    Does your calculator predict your mash pH based on your grist? In general the pH of your water is irrelevant it's the pH of your mash that you need to target.

    FWIW, I've used Spiedels for 140+ batches and have never had a clog using the spigot. Before kegging I'll rotate the spigot so it points to 3 o'clock then clear it by draining a half-pint into a measuring cup. During the transfer, periodically I'll see a bit of the yeast cake getting sucked in...

    In mine the wire you have marked red goes to the spot marked green on the board. The wire marked green goes to the circle next to the resistor in your photo. You can see the broken end of the wire soldered there.
