    Well, for me it depends on keg rotation I suppose. I have thrown batches out, and I have had batches win 1st and BOS. If it tastes like crap for me and I'm sure it wont get any better, if I need the keg, out it goes. good beer, bad beer, if I need it, I get it!

    just FYI, you don't need to have the beer cold to force carb it, although it does help. It will need to get cold after though for serving and so the co2 stays in solution

    Mirror Pond by Deschutes

    have you guys listened to the Brewing Network's "Can you Brew It" They did a run of Deschutes beer. They didnt clone Mirror pond, but came close and with suggested tweaks, I bet it would be damn good. Their Green Flash was dy-no-mite!

    Lagering in a garage

    yeah, I know about the cold and snow. From Chardon originally. If you have the kegerator, why not just throw it in there? I know it may not be set to the coldest temp, but it'll do the job too.

    I'm from columbus and did this 2 years ago with a schwartzbier. Took 1st in NHC 1st round for our region. Freezing wont hurt the beer, but may rupture the keg if it freezes solid.

    Should I make a yeast starter for tomorrow?

    yeah, all good advice. Make the starter. Jamil states that yeast is at peak knockin boots after 18 hrs, so 16 is close enough for brewing and government work. Pour the whole thing in.

    Going for a "grainy" taste, any suggestions?

    from Zymurgy jan/feb 09 Dear Professor article "add 4 to 8 oz of aromatic and/or honey malt to your lagers. Also adding 2 to 4 oz of belgian special B to light lagers will give complexity that can bring out graininess." He also says use german grown hops, and use a munich type yesast.

    There was a question about this in an old zymurgy mag a couple of months ago. same question but as it related to the grainyness in Gordon Biersch beers. Have to look it up, but papazan said to add a bit ___________ grain. I'll look it up and replace the ___ with the grain.
