Don't use liquid smoke. You can get smoked malt from a HBS. Breiss has 2 or 3 different smoked malts don't use peat malt. Using a smoker works great.

Bottling is my Zen time.

I would use bleach on it. Works best for molds

Wilser bags are the only way to go. I have been using them over 5 years and never had a tear or rip and few 40# grain batches. The ones with straps just get in the way.
