I had that same moment last night when I was making a starter for this week's English ale. When I checked this morning, the yeasties took the foam and threw a big party!
This is an interesting thread for me. Recently, I brewed what was supposed to be a Coopers Sparkling Ale clone, but in the end, I got something I've dubbed "Adelaide Mild". In doing a side-by-side comparison, I think what's missing is a slight apple flavor that is present in the Coopers, but...
How smoky do you like your beers? I would start out on the lowish side, say 1/2 pound of smoked.
Edit: I see that Daniels and Larson (Smoked Beer) start out at 1lb for a "hint of smoke", so revise my recommendation upward.
Well, I'm not from Gainesville, but I am visiting town. I stopped by Hoggetowne Ale Works today (shout out to Chris!), and I've been very impressed with the town and the beer we've had here. Fresh Swamp Head is fantastic.
In part it depends on the OG of what you're brewing. If the gravity is low enough, the vial alone will work. As the gravity increases, the need for a starter goes up. YMMV.
Terrapin's great stuff, but I've never seen it around here, nor have I seen Duck Rabbit. :-(
Troegs, Victory, High Point, and Climax are among my favorite local brewers, although Climax isn't in bottles per se, but growlers.
