    StarSan fear (rather, don't fear)

I had that same moment last night when I was making a starter for this week's English ale. When I checked this morning, the yeasties took the foam and threw a big party!

Just got my copy of white/zainasheff yeast book

Mine just arrived today. I flipped through it, and I am psyched!

Is the Coopers yeast responsible for the "Apply" flavors

This is an interesting thread for me. Recently, I brewed what was supposed to be a Coopers Sparkling Ale clone, but in the end, I got something I've dubbed "Adelaide Mild". In doing a side-by-side comparison, I think what's missing is a slight apple flavor that is present in the Coopers, but...

    cooling wort question

Make sure the cold water has been boiled and chilled, and not just from the tap (even filtered). Even better is to get a wort chiller.

    Stout beer yeast

Relax. The last batch of Dry Irish Stout I did fermented closer to 65°, and it turned out great.

    Smoked Malts: Appropriate Amounts

How smoky do you like your beers? I would start out on the lowish side, say 1/2 pound of smoked. Edit: I see that Daniels and Larson (Smoked Beer) start out at 1lb for a "hint of smoke", so revise my recommendation upward.

    Gainesville, FL

Well, I'm not from Gainesville, but I am visiting town. I stopped by Hoggetowne Ale Works today (shout out to Chris!), and I've been very impressed with the town and the beer we've had here. Fresh Swamp Head is fantastic.

Dropped yeast vial into wort; beer tastes yeasty. Ruined?

In part it depends on the OG of what you're brewing. If the gravity is low enough, the vial alone will work. As the gravity increases, the need for a starter goes up. YMMV.

    beer tubes

Wouldn't skunking be a problem? (I guess you could wrap something opaque around it.)

    So who's brewing this weekend?

I'm doing a Weizenbock on Sunday.

Homebrew bill passes Oklahoma State House

A permit is required here in NJ. Stupid rule.

    bucket vs. carboy

Where's the option for "both"? I have several batches going, and only so many containers, so they all get used!

    East Coast beers

Terrapin's great stuff, but I've never seen it around here, nor have I seen Duck Rabbit. :-( Troegs, Victory, High Point, and Climax are among my favorite local brewers, although Climax isn't in bottles per se, but growlers.

    Baltika #5

According to http://www.tatianasbeverages.com/pdfs/Baltika%20Pages.pdf it has water, light barley malt and caramel malt, maltose syrup, and hops. I had it when I was in Russia a couple of years ago, and I don't recall the...

    Selling beer in New Jersey

I know that I have read that Climax distributes its own beers, so I believe it is possible.

Who remembers the first beer they had??

I don't know if I'd consider it beer, but Old Milwaukee. Makes decent chili, though.
