    +1 to rdwdah. The only issue is if you ever decide to do some lagering, you might get some off flavors by not sanitizing fully. Or if you decide to harvest yeast... Something to keep in mind if you ever go those directions, but not to worry about now.

    Wow, I've never caught until now that an imperial gallon is not part of the imperial measurement system, but is in fact a metric measurement. So the US uses imperial measurements, but not imperial gallons. Everybody else uses metric measurements, and imperial gallons. Who thought of that...

    Part of your confusion may be that a US gallon IS an imperial gallon. The rest of the world uses UK or metric measurements.

    So its really just a matter of clarity, not of taste then? Why clarify at all if a filter is used? On another note, Will having a wine sitting for an extended period (4 or 5 weeks) on it's yeast bed and oak chips cause flavour issues such as tannins, or is that only when skins are used?
