    Butterscotch Ale Question?

Definitely post how this turns out. I'm very interested in your Werther's procedure for future use. I believe your hops choices are right on. I'm still thinking about my grain bill, but I have time, because my fermenters are currently occupied. Probably 3.3 lbs. Extra Light DME, some Maris...

    Butterscotch Ale Question?

I'm in the same boat. My next brew will be either a butterscotch or butter rum ale. I haven't settled on a recipe, but I know I will be throwing an extract of one of those flavors in the bottling bucket. I would be interested in seeing your recipe. I make an oatmeal stout to which I add an...

    Imperial? ESB Hop Schedule

That one turned out really good. I am doing partial mashes now. How does this sound? 6 lbs. Maris Otter 1 lb. Crystal 60 1/2 lb. Biscuit 1/2 lb. Flaked Maize 60 minutes at 152. Bring to boil, add 3.3 lbs. Amber LME. 2 oz. Challenger at 60 min. 1 oz. Fuggles at 30 min...

    Welch's Grape Juice Wine

I back sweetened and bottled my 6 gallon batch yesterday. I really like this stuff. I will probably try white grape next. Thanks, Yooper for all this information.

No problem at all that I noticed.

    Coconut stout

Last year I brewed an oatmeal stout kit from my LHBS. I added a 1oz. bottle of coconut extract to the bottling bucket. It was one of my favorites.

B.B. Robust Porter With Smoked Malt

I went with a compromise of 2 lbs. of smoked. I also added an extra ounce of Fuggles. It turned out to be awesome. It's as smokey as a rauchbier, but there is also a really good porter going on at the same time. I'm having one (or more) with pork barbeque today. Life is good.

    Welch's Grape Juice Wine

I made a 6 gallon batch. O.G. 1.096 It was in the primary for 17 days. I racked to a glass carboy today at .998 S.G. It was clear and tart. I want it to be a sweet dessert wine. I have about a half gallon of head space in the carboy. Should I top that off with water and leave it in the...

What would you call this recipe?

...and will it work? I'm fairly new to partial mash brewing, so help is appreciated. I want to steep in grain bags for 60 min. at 150: 3 lbs. Pilsen 1 lb. Vienna .5 lb. carapils .5 lb. smoked. (I just wanted the smoke to be there in the background.) Drain and rinse the bags...

B.B. Robust Porter With Smoked Malt

I was thinking I would like to brew a Brewer's Best Robust Porter and add 1 1/2 lbs. of smoked malt to it along with 1/2 cup of black strap molasses and 3/4 cup of brown sugar. I will double up on the Nottingham yeast. I've made the Smoked Porter kit before and found myself wanting more...

    First Year Brewing

I got started brewing last Christmas...a gift from my wife. I brewed 23 beers and made 4 wines in my first year. At first it was kits, then I started tweaking and finally I'm creating my own recipes. My best effort is a 10% Belgian Strong Ale in corked Belgian bottles. I gave some away as...

    Anybody smoke their own grains?

I was sitting by my fire pit on my patio enjoying a couple of Oktoberfests with a nice smell of oak smoke in the air. I started to wonder about smoking my own grains for a rauchbier. Anybody ever done this? I believe beechwood is normally used. What about oak or cherry? What methods or equipment...

    Hello from Reading, PA

Just wanted to say Hi. I'm a newbie. My daughter's nickname is Schmoogie or Schmoog, so the beer that I brew is called Schmoogdaddy. Schmoogmommy got me an intermediate brewing kit this past Christmas. I have brewed 13 kits and a couple from scratch from extract so far. Some of them have...
