    This method has worked great for me. Just make sure your pressure is very low and you have a good seal with your stopper.

    I wouldn't worry, freeze dried yeast lasts a long time if you keep 'em cold.

    Somewhere in the 30's. I'm guessing up in the 70's range now. That was probably about the same time I stopped taking preboil gravity readings and checking for mash conversion. I guess I got lazy.

    Agreed. Unless you mixed it really well, the sugars are going to drop to the bottom at first. The yeast will take care of that though.

    4 days is definitely early. I never take a reading before a week. Even when it stops bubbling, the yeast are still working.

    If you've still got krausen (foam) that puppy is still going. In my experience, Golden Strongs take a while. Take your time with that beer.

    Easy way to tell if mash is converted

    There were a lot of numbers in there. If I'd say I prefer an iodine test, I'd be lying too. After an hour, it does into the keggle.

    And milds! I agree completely. You will notice a big difference between 2 weeks and 5 weeks. But if I'm bottling, I always try one after 2 weeks. You just can't help it.
