    So I got my package a few days ago, and man, I can't believe I waited this long. All I've tried so far is the Goteborgs Rape, and I really like this stuff. Apart from no longer having the sandpaper lip and the spit cups, the taste is great and I have no craving for the Skoal. Thanks JoeMama!

    Check out Milltown in Carrboro (it's adjoined to Chapel Hill), they have a great Belgian selection, as well as some good local brews. Other places with a good selection will local favorites are Tyler's (especially the Durham one), Brixx and Carolina Brewery (they make a few tasty beers) on...

    How often does your beer get infected?

    Welcome. Generally, not that often. Beer is pretty forgiven. In over 60 batches, I've had only a few that have gotten contaminated, and I can usually trace back to to where that happened (not fully clean bottles, dirty beer lines, etc.).

    I'd recommend a Viszla. Very friendly, great with kids, are naturally bird dogs and generally don't get too big.

    I think I've often used Caramunich I in the stead of Crystal 40. There is some redundancy among the grains though.

    Good job on your first AG. As far as efficiency goes, consistency is key. Getting a high efficiency is great, but getting the same efficiency every time goes a long way in terms of designing and brewing great beers.

    No worries, it'll be fine in the carboy for a week with the gelatin.

    Dry hopping and hops in the bottle

    I agree, leaving the beer on the hops for more than a few weeks can lead to vegetal or grassy flavors. Personally, I wouldn't do it, but if you want to try it in a few bottles, go for it. I would make sure you cool them for a while before you open them to make sure you crash out all the hops...

    RDWHAHB. A little bit of oxygenation likely won't hurt.
