    BigFloyd is correct. Tape it to the side of the carboy and insulate it. I control mine to within 1 degree and I can ramp it up by 1 degree if I need to. If you just put it in the air, that doesn't tell you anything and as Jipper said, the temperature of the wort can easily be 7 -10 degrees...

    What is meant by batch size?

    I always calculate a 6 gallon batch, post boil. That way I put 5.5 into the fermenter and then 5 in the keg (or bottle). I'm always guaranteed a true "5 gallon batch".

    I think you need to have one finished as you describe and show it in use. The Speidels took off like crazy to the point that they are always on backorder so there is a market for something like this. Once people see it, they could easily change their mind. Remember also that most of us here...

    Table sugar will be just fine. I suspect that if you're getting "cidery" flavors from table sugar, your problem is probably bad fermentation temperature control, not the sugar.

    I've used table sugar in every batch that I bottled before I started kegging. I never had any issues. Myth, busted!
