    Racking to Secondary and Hop Leaves

    From now on maybe use a hop bag for whole leaf hops when you boil. Order the hop bag now and when it comes in put it over the end of the racking cane to act as a filter. Not sure what else you could do to keep the leaves off the end of the racking cane.

    Check the yeast packet... it should give you the proper temperature recommendation. I would say as long as you keep it under 70 degrees you will be fine.

    You should be fine using the dry stuff... if you progress into all grain start getting the liquid and doing starters and all of that. There is a lot you can do with liquid yeast as far as storage and propagation you will find in these forums but until then dry packets are fine.

    Infected bucket

    You could try star san and see if that gets into the scratches enough to kill all of the nasties in there. Brew a new batch and see if it gets infected. You could also try to take a fine grit sandpaper (800+) to them to try to smooth them out, sanitize, then test again. If you feel the need...
