    Which in-line regulators are you referring to, the one like the blow tie with the integrated gauge? If so I'm sure you have a good idea where the leak may be. I have the older styled one, which I pretty happy with.

    I have had good results adding latic acid to the finished beer. It gives you a lot of flexibility in dialing in your acidity. Using acidmalt would be the least attractive option to me to use.

    I like San Diego, ferments fast and clean, good attenuation. Whitelabs suggests a limited fermentation temp range, I have always stayed in the in range and had good results.
