    Your gonna wanna pitch the yeast after 48 hours or so after the lacto is pitched. As far as aerating I'm pretty sure lacto doesn't like oxygen to much so hold off until you pitch the yeast then rock the fermenter for a bit to aerate for the yeast to use.

    Did u make starter? wait 72 hours then try taking hydrometer reading. If the gravity is dropping your good. If it hasn't changed pitch more yeast. I had a blonde ale show no bubbles in the airlock for two weeks of fermentation but the gravity dropped down to 1.007 and the beer turned out great...

    I use a 16 gallon pot as my boil kettle. It has a larger diameter than most other boil pots I have seen and I seem to boil off like 3 gallons or more on a 60 min boil for a five gallon batch. I was wondering if the increased surface area could cause this or could I be boiling to vigorously?

    You can do a decoction on any style and it won't hurt it, but the decoction may not be noticeable and there by not worth the added time and effort for every style. But if you wanted to experiment doing every style like that go for it.
