    Update: The pH, efficiency, volume, and OG were all spot on their respective targets and the carboys are ripping already. Not bad considering we had 2 boil-overs, lautering was slow as hell, and we kind of guestimated the boil time based on how much we needed to get it down.

    I just keg it and purge with CO2 as normal, but then disconnect the gas and shove it in the back on the kegerator.

    What I did for beer today

    Kegged the Lithuanian farmhouse ale and oatmeal stout. Developing quite the supply of brews now, so looking to chop something off my remaining (and fairly ambitious) brew schedule. Luckily I have 2 events coming up, so that should knock the volume down a bit.

    Viking Age Brew

    Different book in the pic, but I read that one too. This is my sahti. Every year I try to make it a little more authentic. This time I was able to use actual Finnish bakers yeast. Never used the juniper branches, just berries. It's one of the things I'm looking to do next time.

    Brewed a sahti yesterday; missed most of my numbers. But the volume was spot on, and the yeast (authentic Finnish bakers yeast) got ripping in a hurry! Now to watch it like a hawk so I can rack it at the proper time.

    Over the weekend I dumped the black IPA (keg had issues and the beer wasn't great anyway). Kegged the porter, and flavored half with vanilla/coffee; took a ton of vanilla to get it to come through. Also brewed in the heat yesterday.

    Brewed my tried and true porter recipe on the 4th. Messed with my mill a bit beforehand to try to mitigate the efficiency issues from the last couple batches. Better, but not quite there yet. The design of the mill makes it difficult to measure the gap, so it's basically guess work.
