    Peach/Mago Melomel

    My two cents: I've done a peach "cider" a couple of times using 50% Great Value white cranberry-peach and 50% Jumex peach nectar. I have liked the result, especially still and with a touch of backsweetening. Maybe try making a small batch of that to see if it would be close to what you want.

    I imagine this probably wouldn't be anything like that. I just bought lychee nectar at Costco, added a little nutrient, and pitched cider yeast. I fermented dry and I bottled conditioned it. Fairly tart; a bit of honey at serving helps boost the perception of fruitiness.

    Ingredient Price Increases

    The observation that ingredient prices are up 36% since 2020 is pretty much in line with a recent WSJ piece that described food inflation since 2019 (I think) as up 33%.
