I have been experimenting with making about 5-7% sugar washes and backsweetening/flavoring w/ Kool Aid powder... it is a work in progress. I would imagine without careful nutrient additions and re-suspension of sedimented yeast it would be hard to reach 15% at all, much less without weird flavors.

Today I bottled up my microbatches (~1.5L) of Redbud Wine/mead and Serviceberry Wine/mead. Each had just enough left over that I combined them into roughly 400mL, added ice, sweetened, and have found pretty good! I just need to let my bottles age for a while now.

Update: removed the berries (basically just a bunch of seeds now) and transferred to new jugs. Color looks great!

I have a couple 1 gal carboys. For stuck on gunk, I soak it with StarSan and then put in some uncooked RICE and shake a bunch. This might not work for bigger carboys.

I have used the jar trick, but with a bit of vinegar, water, and dish soap. The vinegar smells like fermented/rotted fruits and attracts the flies. I suppose you could also put beer with soap in the jar. I cover them with plastic wrap and poke little holes for the flies to find their way in.
