    False Bottom Question

    If I were spending over $200 dollars on a kettle / false bottom setup I would want it to fit together perfectly.

    time limit on pitching rehydrated yeast?

    Its fine to use, maybe should have covered it if it was out that long but you should be ok. No rinse works fine I use StarSan as my sanitizer.

    co2 in the fridge?

    Either way works fine, keeping it in the fridge does nothing to the gas. It basically comes down to where you have room and can access the tank.

    cooler mash

    I have a square and a manifold, cause I had a spare square cooler. It works great and I can do 5 and 10 gallon batches.

    If you chill in your brew pot then transfer to your fermenter you can leave a good amount of hops and trub behind in your brew kettle.

    You should be able to calibrate the thermometer, have you taken readings of boiling water? I usually calibrate at boiling (because its closer to mashing temp) and check accuracy with freezing. If you are brewing your first batch AG you should be ok with a thermometer. I probably wont be...

    Fermentation slowed

    Just let it go! Sounds like its on track, might be a little low in alcohol percentage but nothing you can do about that now. I am sure it will turn out fine!

    Any thoughts on heating the copper with a torch or in the oven a bit before tying to bend it?

    mashed too high

    What temp are you fermenting at? I would think even if you mashed at 162 you should get down below 1.042. Maybe try and make a good starter and rerack then pitch again?

    How long does dry extract last?

    I usually dont make starters, however I need to make one for this weekend. Can I use dry extract that is about a year old to make the starter? I would never use something that old to make a batch with but for a starter I think I might be ok.

    First all grain pumpkin beer

    By purging do you mean mashing? I mash with 1 or 1.25 quarts per lb. Add that amount of water up and figure 0.1 gallons water is lost by absorption for each lb of grain. Then sparge with the amount that will give you the correct preboil volume.
