    No, I've never had Apfelwein before. I decided to make it based upon the rave reviews in the recipe subforums. There isn't any signs of an infection that I can tell in the bottles or what not... ugh :-\

    It's actually getting worse. Decided to crack another bottle to share with the wife, to see if it's getting any better... She actually gagged :( Have you ever had really BAD mixed wine (aka Kitchen Sink wine)? This is what it tasted like.

    Have you looked up the water quality report for Tampa? Use that information in one of the Water-Brew calculators that are occasionally posted on the site. It should tell you whether or not the water is the issue. You can get the water quality report from your city/county water site usually.

    I know lots of people on here have opinions on tap water, and the advice I've read mostly says "Bad tasting tap water = bad tasting beer". In the case of my tap water, it's absolutely horrid, but it makes damn fine beer. San Antonio's water is excessively hard and is some of the worst tap...

    My first brew was a witbier. Should I rack to secondary?

    I thought the same thing on my first brew... which was also a Witbier. Please don't rack it to a secondary. I left it in Primary until most of the krausen fell, and then just bottled it. It turned out excellent.

    Well I'm not terribly concerned about the support, since it will only be supporting the lid. I'm going to attack the collar to the freezer, and have the lid just open. I don't mind lifting the kegs over the collar.

    Question about the wood for the collar - Is 1x8 too thin? The 1" diameter? I found some really nice Red Oak today, but it's only 1 inch thick. How wide should I be looking at? 2x6 or 2x8? I priced everything out today at the Depot... purchasing everything next Friday when the bonus comes in.

    Brewing with Cocoa, lactose and coffe.

    I'll be honest, I just threw my fresh ground cofee grounds into the primary. About 1.5oz. The flavor is a bit strong, but I expect that to go down after time. I used Chocolate and Unsweetened dark chocolate. It is delicious.

    Well, the hose length comes with the keg package from Keg Connection. I guess I could call them up and see if I can get 10' lines instead of the stock 5.
