What is your ratio of keepers vs dumpers?

Two years and 35 batches. Not one bad beer. My first was the worst. That was the only one I did without temp control. Was a little harsh at first but got better with a little age. I am VERY careful with sanitation. Never want to dump a beer due to an infection. Way too much work goes into a...

Raspberry Kolsh - Raspberry in secondary - how much time on fruit?

Yes. Not sure how it ended up here. I was in a completely different thread.

Raspberry Kolsh - Raspberry in secondary - how much time on fruit?

Brined and smoked is my favorite. I do brine frozen birds. I just cut back on the kosher salt a little in the brine. Never had one taste salty. Injected and deep fried is my wife's favorite. I usually deep fry because of time. Sometimes I smoke one on brew day. I can watch the smoker wile...

Issues with a Taprite regulator and/or suggestions on another brand

I have worked with CO2 systems for a long time. The high pressure gauge will not change until the tanks is near empty. When that gauge starts to drop it's time to get a refill as it won't last long after that.

Line size? Oetiker, Pex, Worm Clamps?

You definitely want to use Oetiker clamps. I have done installation and servicing on commercial soda and beer systems to over 20 years. They are the only clamp that seals the tubing properly. Worm clamps don't exert even pressure on the tubing and don't apply enough pressure to properly seal. A...

Astringent/overly bitter stout - will it age out?

Go with option #4. My Stout is at its best after about 6 months in the bottle. Goes from harsh to nice and mello.

What kind of fermentor are you using..

I used a FastFerment for 2 years and 31 batches. Never a liquid leak. Had trouble getting a good lid seal. Not a major problem but I like watching the airlock bubble. Easy to clean and sanitize. Temp control can be a challenge due to the size and shape. Closed transfer was easy using a sample...

Are you entering the AHA National Homebrew Competition? Why? Why Not?

No interest in competition. I brew for my family and friends. That is the only feedback that matters to me. Some beer judges opinion means nothing to me. I have had some local pro brewers taste my beer and love it. That's good enough for me.

    Lager fermentation smell

Most of my lagers show very little activity. And smell awful for a few day. Normal for most lager yeast that I use.

    Conical Fermenter

I used a FastFerment for 2 years and 30 batches so I have plenty of experience with it. I bought it because of the ability to dump trub and harvest yeast. After only a few batches I found that I wasn't doing either. Found ways to minimize trub going in and started over building starters so no...

    Snowy drew day

Been there, did that, picks to prove it. Not as bad as you are expected to get. 12 degrees and 6 inches on the ground by the end of the boil!

How low can you go? (outside temps)

12°F was the coldest I have brewed in. Had to wrap the MT in towels heated it the clothes dryer to help keep temp. Hardest part was keeping the garden hose from freezing so I could use the immersion chiller. Was the fastest I ever cooled wort down to pitch temp. BREW ON! Adversity has no effect...

Pros and cons of "fast ferment" ?

The hole for the thermowell was in from factory. I did have to drill the hole for the sample port. I highly recommend adding one of you haven't already.

Pros and cons of "fast ferment" ?

I Used a FastFerment for 2years until I dropped it and broke the valve off the bottom. The size and shape make temp control a bit of a challenge. I built a stand in a small freezer with a collar as a fermentation chamber. That worked well but getting it out while full was another challenge. To...

To SMaSH or not to SMaSH, what hop is the question...

My favorite is Mosaic. 3oz spread out from FWH to WP. Used with Maris Otter malt and WLP007 yeast. This is my house ale and I always have this one on tap.

    Sulfur smell in hefe

I do let this recipe in the fermenter for a 2 full weeks before kegging. I feel a hefe needs a little time to finish properly. 3 weeks if I don't have another brew scheduled.
