    I'm sure both yeasts will make excellent IPAs. I believe WLP001 is based on the Chico strain, which is some people's go to IPA's. Use the yeast that's going to expire sooner and save the newer yeast for something West coast inspired?

    I doubt many stores will have a dedicated gf mill though. Just FYI, they will likely run it through a mill that gets used for non gluten free grains. I am not into gf or have a sensitivity to gluten, no idea if this makes a difference or not, but it's good to be aware of a possible...

The only place that makes brew specific pots in South Africa, the thermometers they provide have a study probe and screw directly on the pot, so no need for a thermowell. We have guys that resell blichmann and braumeister...

    I don't see why you couldn't clean it. Just strip it, wash it with a brush and water, then dry and oil it with a gf friendly oil to prevent rust. Then I would run plain old rice through it once or twice. I mean, you wouldn't buy different cutlery for a gf meal, you would just wash them.

    You can try mash between 60c and 65c , which is the optimal tempreture for beta amylase enzyme activity. So maybe try aim for the middle range of 62 or 63.

    I'm sure there is some brewing based store in the states that will have the right amount you need. I guess the electric brewing section might have some leads. That or other alternatives. I have seen guys in the diy threads also use industrial use thermo compound.

    3 degrees for 15 minutes is not the end of the world. I wonder how accurate your thermometer is. Maybe it's reading lower than what the tempreture actually is..? Do you have another thermometer? Also, do you measure in different spots of the mash? I find that there are hot pockets and cooler...

    Your pot looks perfect now. I'm guessing the white flakes are some minerals from your water. Just clean your pot with a sponge, don't use something abrasive and you should be golden. You got a nice layer build up, nice job.
