    Suggestions with a hoppy APA.

The white labs yeast should be fine, but the US-05 would be a clean start. I tend not to mess around with questionable yeast.

    Deal. That was easy.

    Suggestions with a hoppy APA.

Holy crap. Just realized I left the hop schedule on my post for a ten gallon batch. Halve them! Wow. That might have killed you. I just saved your life!

    Suggestions with a hoppy APA.

Here's a favorite recipe of mine: 8.5 lbs 2-row .5 lbs cara-pils 1.5 lbs 20 L crystal malt Hops: 15 HBU hops for bittering (won't matter too much which one you use - prioritize the other additions.) 60 mins 1 oz flavor/aroma hop at 15 minutes 1 oz aroma hop at flameout 1 oz dry-hop of choice...

    Cleaning an older barrel

A few years ago, I was given a full-sized wine barrel (56 gallons, I believe) which had been used to age red wine. It has been emptied a couple of times for moving, and this past time (about a year ago), I forgot to fill it up with the solution to save the barrel. It has been sitting for a...

    Lager temp problem

Worksnorth, it will probably be alright, but you may detect some "creamed corn" flavor in the beer. You can't do much about it now, so I'd let it ride and see how it goes. It will still be drinkable, but now that you will be looking for it, it will seem like a glaring off- flavor. That's also...

    Beersmith

I've not spoken to anyone who though Beersmith was not worth it. However, the first software I used was the Beer Tools website. You can play with it for free. Now I usually use BrewPal since I have an iPhone. That one is definitely worth the investment.

i love homebrewing but i almost cant

My brother Joe just wrote an article about brewers in tropical regions who don't have ready access to ingredients, etc. There are even some folks starting craft breweries down there. You should check it out if you can get a copy. There are all kinds of folks in hard-to-reach places who brew...

    Simplest (?) Keggle Cutting Jig

Lay it on its side first. This should prevent the fountain of old nasty beer in your face.

    Cat names?

    Brilliant list. Especially Sir Lix-A-Lot.

    Cat names?

Lilliputian. But only if he's small. Otherwise, I still like Larry. In my house, we have the small black shy cat named Violet, the ginger tabby farm cat named Thomas, and the 25 pound Manx named Meow Meow. Meow is also often referred to as Chairman Meow and "Lunchbox." He's a hoss.

    Anybody around Springfield, MO?

7:30. Bring something to sample (homebrew if possible, but craft brew is common, too) and "munches" if you want.

    Anybody around Springfield, MO?

Hey, Darkness, you should come out to one of the meetings. Our next one is only one week away. It's a good group of guys. We're not really organized. We mostly sit around and sample and talk about beer.

    The ORIGINAL Black IPA!

I call them delicious. seriously, though, American Black Ale makes sense. I tend to call mine a hopped-up porter. Overall, it doesn't matter as long as you know what to expect from the beer in the bottle. I'm not a fan of shoehorning beers into styles, anyway, styles have 2 purposes in my mind...

    Recipe critique/dry hop questions.

Looks like a pretty good recipe. The honey will dry it out a bit, so that will be nice. It might be a bit much on the crystal malt, but it depends on your taste. Overall, it will be a drinkable beer, and you can always tinker with it before you brew it again. As far as dry-hopping it, I...

Never tried anyone else's home brew...

Sounds like you'll be trying other folks' homebrew soon enough. Way to go joining a home brew club. It makes the hobby a lot more enjoyable to share it with others. And if that group is anything like the Zymurgists of The Ozarks, bringing a high quality commercial beer will suit them just as...

    good cheap starter kit????

There are a lot of good places. Shop around at places like homebrewery.com, morebeer.com, and nothernbrewer.com. From what I can tell, all of the vendors who support this site seem to be good, too. I suppose this crowd would let you know in a hurry if they weren't. Even if you're on a...

    Something going on today?

I think there's some big soccer game on today. The guys at the bar kept talking about 'football', and I think the NFL season is over.

    Lemon balm

I've though about this but never did it. To be honest, I think I'd rather toss them in secondary or make a tea and pour it into secondary so as not to lose the delicate lemon flavor. Like I said, though, I've never actually done it. Maybe this year.
