    OK, so maybe not the "only" difference, but it's the "main" difference. 3/4 lb of chocolate is a BIG addition, which is probably why he decided to up the hop amount.

    I was going to suggest something along these lines, too. With a single burner, I think it makes the most sense. You DO NOT want to move around full, heavy pots of scalding wort/mash. Moving around several smaller buckets is much more managable.

    Once I got Beersmith dialed in for my rig, my final volume is usually within a qt of my target for 11 gal brews - not bad. I'm afraid the plastic sight glasses I use on the MLT and HLT would melt on a boil kettle, too.

    Things you use before you chill the wort need to be clean, but not sanitized. The boil will kill any germs that get in there. Anything that touches the wort after the boil should be sanitized. So the paddle should be dunked in a bucket of sanitizer before you use it to clear the hops after...

    I bet your intuition was right and your wort was stratified when you took the reading. Next time, especially with extract brews, make sure it's mixed up really well before you draw a sample.
