Earliest Time it is "Acceptable" to drink on brew day...

I too, wait until the boil. Then it's open season. Too easy to mess up the hop additions, etc. after you've had a few. All of my brewing mistakes have been when I had some brew before the boil... just speaking from experience!

    Strange beer allergy

For what it's worth, I have a friend who has the same sort of allergy. American beers; no problem. Any sort of German or Belgian brew and her face gets hives for weeks, painful rashes, etc. Worst reaction seemed to be from Hacker Pschorr. I think that there are just certain yeasts that...

    Steam Beer Question

I would definitely suggest using a blowoff. California Lager yeast can be a beast once it get's going.

    house yeast?

I've actually been wondering this myself, especially with the recent "collaborations" of brewers/breweries with yeast companies on special strains. Examples being Denny's Favorite, NB's Neobritannia, and AHS's Greenbelt. They're all excellent yeasts (to be fair I have yet to purchase or use...

    How many geeks brew beer?

IT for over 12 years. Total geek. It's funny, lots of people seem to have the same groups of hobbies. Other hobbies include radio/ham/etc, martial arts (purple belt in bjj), cheesemaking, gardening, and being an alcoholic. Leo.

    Octoberfest possibly gone bad...

I'm pretty sure that's an infection. The good news, it's not undrinkable.. just rack from below the top and call it a sour ale or something :) I never really liked one-step as a sanitizer, and re-using is probably the source of your infection. A great cleaner but not so great at...

What is the "worst" beer you like? Your guilty pleasure, if you will...

+1 on Coors Lite. Can drink a 12 pack and still not have a hangover. A great summer beer. Budweiser, on the other hand, always gives me a headache.

Lagunitas - Same Flavor Throughout Styles?

+1. I think it is most prevelant in Brown Shugga, perhaps it is actually Brown Sugar or Molasses? I've detected this flavor in a couple of Dogfish Head beers as well, but all the Lagunitas beers seem to have this flavor.

    Bier Muncher Blue Moon

I would follow BierMuncher's recipe. I brewed it a few months back and it was a big hit. I used the recipe: 4.5lbs Marris Otter 4.5lbs Flaked Wheat WLP Witbier #400 (use a starter) 0.75 oz Coriander Seed (5 min) 0.75 oz Orange Peel, Bitter (5 min) 1.00 oz EKG (60 min) Make sure you give...

    Robust Porter

Brew Denny Conn's Bourbon Vanilla Imperial Porter. Omit the bourbon and vanilla. You will be happy.

    The down fall of Wyeast?

I don't believe what that site says about the nutrient pack not being ruptured properly and the product leaking. I smack those suckers so hard it would knock someone out and I've never had one rupture. I use White Labs or Wyeast, depending on what the recipe calls for.

    Amber Ale Recipe

I highly recommend Denny Conn's Waldo Lake Amber.. I brought three kegs to a family reunion and this went the fastest and I got the most compliments on it.

difference between s-type and 3 piece air lock

I always use blow-off tube for the first 4-5 days, then S type. I find you are much less likely to get whatever you've filled the airlock with sucked backed into the fermenter with the S type, and they require less refilling (for longer fermentations.)

Brewing the Dogfish Head 90 Minute IPA clone today

I brewed this last month using the same exact recipe and it is DEAD on. I don't think anyone could tell the difference between my batch and a purchased bottle. I batch sparged at 149F for 60 minutes. Easiest way I found to do the hop addition was to mix all the hops together (except the...
