    Infected Starter>?

And to put an end to this thread. I must have caught something wild. Remember this came from a Stone Enjoy By, which has no discernible Belgian traits. The red ale was taste tested last night and it is very Belgian like. Had a buddy try it and he thought I brewed a Belgian on purpose. Not a bad...

    Adjusting cider after fermentation

Just add some juice to the pint glass pre-pour. That's what I do. Today apple, tomorrow peach, Saturday Cranberry. I find my first few pours I add juice, after 2-3 I just drink it dry... To each his own. That way you're not stuck with 5gallons of just apple, also no risk of over doing the...

    Any Bacon Makers Here?

If you have a business Costco membership you may be able to order it from their website. IDK, just a thought. I paid $2.79 as well here in SoCal. Some of the bellies are very meaty and well marbled.

    Infected Starter>?

Well, its finally dropped clear @ 11 days. But it still has that "Pink Bubblegum" smell that I associate with Belgian yeasts. BTW, it grew ALOT of yeast for a single step up. Still cant say one way or another if it is wild yeast or stress. But it doesn't look Infected by a lacto or anything...

    Infected Starter>?

OK, from the start: ºI bought a bottle of Stone Enjoy By: Unfiltered. Grew the dregs for 5 weeks stepping up as needed. No stir plate, just casual swirling daily. ºThe yeast would blow through the starter wort pretty quick, dropping and leaving a crystal clear golden starter. ( I used amber...

    Any Bacon Makers Here?

I added it right from the beginning... Ended up doing 3rds. 1 Salt and Sugar (Gotta compare to something) 1 S&S + Cayenne & Cracked Black Pepper ( a **** Ton :D) 1 S&S + Chinese 5 Spice (only 3 tsp) its strong and I didn't want to overdo it. They are juicing out nicely, cant wait to smoke...

    Any Bacon Makers Here?

Going to give Bacon a shot! Just picked up a 9lb Belly @ Costco, some Pink Cure salt and Chines Five Spice. Planning 5lb of Cayenne & Black Pepper and 4lb of C5S Was going to do 1/2 in Maple, but the C5S sounds like it will fit the bill nicely. Something different!

    Confession Time

 Well, I must be the luckiest guy ever. I used OneStep for over 100 batches and no infection. Switched to StarSan around batch 105.... and only did so to see if it made a difference in final taste. :mug:

    Sparging with one pump

Pump from htl to mt, gravity from mt to bk. Pump from mt to bk ended up in a stuck mash for me when the water level got too low... Gravity is you friend.

    1 year old mead "tasteless?"

Add your favorite Fruit or some Juice? You can always just add some juice to your own glass when your pour, that way you can try different flavors without having a whole batch of "X" mead (Cyser). I do my cider this way; want it Dry? just pour a glass... Want it sweet? add a bit of juice to...

What did I cook this weekend.....

Wax paper and two plates.... Same ****. Season meat, Roll meat into even sized balls, Form: plate>wax paper>meatball>wax paper>plate. Squish to desired thickness. Best technique for having all uniform burgers. Freeze them between wax paper for homemade Frisbees! :D EDIT: Maybe I...
