Old Pumpculiar Pumpkin Ale - BYO Magazine October 2005

My 8 year old son decided to purchase the October 2005 issue of BYO magazine to "help" me out. Being that it cost me $15 I thought I would brew something from it. Having never brewed a pumpkin ale before I decided to try the Old Pumpculiar recipe. It turned out great. The entire brew day and...

Need advice for a mini keg

Though I see no reason you couldn't fill that with canned or bottled beer, it's not the ideal solution to getting your keg filled. Look around for a local bottle/pizza shop or bar that does growler fills. You can get fresh draft beer and keep it fresh/carbonated with the cap and mini regulator...

    Deschutes Hopzeit recipe?

I found this recipe which I think would be about right: https://www.mibrewsupply.com/recipe/view/deschutes-hopzeit-clone

    Reducing ABV

You are correct. I ran my calculations wrong and it turns out I used the pre-poil brix reading of 11.4 instead of the original brix reading of 13.4. Final brix of 7.4 which comes out to 4.8% ABV. I should have realized that. I apologize for the misleading information in my original post.

Making a big beer in a five gallon mash?

I've done 15 pounds of grain in my 5 gallon cooler using 1 qt/pound. It's hard to get the desired efficiency. From my experience you'll never get to 1.081. You are going to need to add some amount of DME to reach that goal. I added 2 pounds of corn sugar and I only made it to 1.072. The recipe...

Very good advice. Hope you're doing OK.

    Reducing ABV

Mash at a higher temperature. I made a strike water temperature error in a beer a few months back. Ended up mashing what should have been a 5.5% beer at 160 rather than 152. It was a dumb mistake. The ending beer started at 1.052 and ended at 1.015 with a final ABV around 3.5%. I haven't rerun...

3 gallon Fermonster - spigot install

I always put the washer on the outside with the flat side flat against the spigot side. The bevel facing the port on the Fermonster. Hand tighten as much as you can. I've never had a leak doing it that way.

    beer bottling

Can you share a picture. You can't cap screw top bottles. They won't seal properly. The beer will probably be fine. It just may not carbonate properly.

Brewing a Chinook Session IPA - All the Flavor with half the ABV

A few weeks back I brewed up a Chinook Session IPA. It turned out to be a successful brew. The flavor profile came though much better than I expected. I posted the full brew day. This was the first time out for my new brewing setup. I recently upgraded to a 10 gallon kettle and mash tun. I...

    refractometer and gravity

The short version is to take your refractometer reading and multiply by 4. There are several calculators out there. https://www.brewersfriend.com/brix-converter/ That one has the formula at the bottom for calculating it yourself.
  15. BrewingAroundtheRrealm

    Hops

Go for it. I substitute out hops all the time. You'll get a slightly different flavor but you'll still make a good beer.
  16. BrewingAroundtheRrealm

Sludge in the bottom of the beer bottle

How much sludge are you talking about? A little bit is fine. It's to be expected from a bottle conditioned beer. Did you drink from the bottle or pour in to a glass. Pouring in to a glass is recommended with bottle conditioned beers. You can leave the yeast in the bottle. You do not want to...

    Brewing pumpkin beer?

I did a pumpkin beer two weeks ago. Added the following: 5 TSP. Cinnamon. 1 TSP. Powered Ginger .5 TSP. All Spice. .5 TSP. Nutmeg. Most of that will get blown out in fermentation. At kegging this morning the sample only had low flavor profile of any of the spices. I made a spice tea with 1...

New Brewer brewing from kits - what does software do for me?

It's a good place to learn from. Enter the kit in to the software to see if your numbers match what the kit says you should get. I've had a few occasions where a kit was missing an ingredient or had less of something than it should have. I only realized that once I entered the ingredients in the...
