How much DME or LME can be added to raise the gravity of the wort during boiling ?

I prefer DME. Technically, no there is no limit. I've used up to 2.5 ponds in a partial mash IPA. There's no reason you couldn't use 5 pounds or more. It is going to change the flavor/color of your brew. You may want to think about using corn sugar instead. It's flavorless and yeast will eat...

    Session Oktoberfest

Home brewing is about brewing beer that you enjoy drinking. Not about brewing beer that fits in to a category. There is nothing wrong with taking a given recipe and scaling it down to fit the ABV that you want. If you want to make a lite Marzen/Oktoberfest, go for it. It's not a style but there...

    Very low post mashing volume

I second this. With out knowing the grist weight it's hard to tell where you went wrong. Just taking a guess you would have needed to start with around 15 liters. With a sparge of about 15 liters to get final boil volume.

    White Labs Yeast Vault

    I take that back then.

    White Labs Yeast Vault

I believe that "Your Vault Strains are about to ship out!" email from this afternoon was sent to everyone. I received that twice on two different email accounts. One of which I did not use to contact them yesterday.

    Forgot The Yeast Nutrient

Are you sure the fermentation is completely done? The FG can continue to drop even if there is no sign of fermentation. Measure the gravity over the course of the next few weeks at least 3 days apart each time. That will tell you what is really going on. If you are really concerned, gently...

    Insanely foamy beer

Can you provide more information? How long after fermentation ended did you bottle? What is the batch size? How much priming sugar did you use and what kind? Corn sugar, table sugar? What is the beer style? In most cases where I've had over carbonated bottles, I bottled too soon. Less than 2...

    White Labs Yeast Vault

If you reply to the original "Your payment has been received" email, a CSR will reply with an update. That is what I have done several times. They usually get back to you in a few hours.

    White Labs Yeast Vault

I talked to a CSR at White Labs earlier this evening. Their next target for shipping Vault orders is 7/29. I do not know if that is all remaining orders. WLP076 is on the list to ship on or around 7/29. Over all they are back logged with Vault orders. Their exact words were "Trying to get them...

    White Labs Yeast Vault

Has anyone received their vials of WLP665, WLP611 or WLP076 from the Vault clearance? I never received a shipping notification for those. All of the other orders have arrived. I did email White Labs for an update. Have not heard back yet.

Trying to brew an Allagash Sixteen Counties clone

1 pound of oats is probably right. The only time I use more than a pound is when I'm brewing a wit of some kind. It's getting easier to locate malt from small malt houses. But it's still kind of a challenge. You are right in using standard 2-row. The difference is going to be minor. You're...

Trying to brew an Allagash Sixteen Counties clone

Are you going to try to source the same malt they used. That might be the hardest part. Blue OX is available: https://centralstreetfarmhouse.com/products/2-row-pale-malt-blue-ox-malt I did not find the others. Yes, raw wheat is just unmalted wheat. I use it in my Troegs Blizzard of hops...

    Fermentation Time

Waiting is an art form. Especially when you are just starting out.

    RIP Yeast

Before I started making starters I had several direct pitch batches go 72 hours with no signs of activity. Which is the reason I started doing starters. Kits can be a gamble. Unless it's stamped on the box there is no way to tell when it was packaged. Did the yeast have an expiration date on...

    Fermentation Time

I regularly turn around ales in 7 - 10 days. Assuming you brewed an ale? 3 weeks is definitely enough time for that to be ready.

    7G SS Fermenter

The Anvil 7.5 Gallon Brew Bucket is my go to budget Stainless Steel fermenter. https://www.anvilbrewing.com/-p/anv-fv-7.5gal.htm It's not a conical but it does have a coned bottom. And it's only $129. I believe they have $7.99 flat rate shipping. Several other sites carry them as well. You may...

    Going to Harrisburg, Carlisle Pa

Stop by the Troegs brewery in Hershey. You have to reserve a space in advance if you want to take the brewery tour. They have small batch limited run 6-packs in their company store. The also have a tap room where they usually have some of the limited batches on tap. It's great for an afternoon.

    White Labs Yeast Vault

I was charged for WLP025 on 7/5. With the Vault clearance it's been about 2 weeks from charge to arrival at my front door. I would expect WLP025 to ship end of this week or the beginning of next week.

    Smoking Grains & Jalapeños

I've been wanting to brew a jalapeno beer for a while. This sounds interesting. I'm curious to see where this goes.

    WLP075 Hansen Ale

I received the yeast on 6/26. Made a 1.5 liter starter. I put that on the stir plate late yesterday afternoon. By this morning, 6/27, the krausen was present and the starter was active. Clearly shipping yeast in the Summer is not the best idea. But I'm not having any issues. Despite the yeast...
