The other thing that you may want to check is when you add your LME/DME is it fully dissolved with the heat removed from the bottom of your pot. This may add to your color and give an off flavor if you are burning it to the bottom of your pot.

There is a blow off tube that works rather well. It is made from 3/4" PVC tubing and then a small piece of Tygon that fits in the bottle, kinda looks like a hangmans pole. The other suggestion is to get a bigger bottle or bucket.

I third the paint strainer bags or second the filter media bags from a pet store. If you run them through the dishwasher on the top shelf they will clean up pretty well.

The reason behind the dark area is so you do not skunk the beer, your hops are the reason a beer would skunk, they react to light. As for temp, I did mine at about 70 and it turned out great.
