    Adding water to the fermenter

    From the sounds of it you want to add such a small amount of water (~25 oz) that I would just enjoy two less slightly higher ABV beers. I dont think any potential risks are worth having a couple extra beers. If you were down a gallon or so this would be a different story but i think for a pint...

    To answer your question (at least your first one) you can get an external controller to keep a freezer at 50 Johnson controls as well as a few others make some reasonable ones. most online HBS have them available

    Secondary Fermentation Questions

    The directions are good for most beers. The reasons for using a secondary are to clear the beer and for bulk conditioning. Since you are making a wheat you don't want the beer to clear so a secondary would not be as helpful in this case. My suggestion is to leave it for 2 weeks and bottle.
