    it totally depends on so many conditions, you can easy go way over the tolerance listed on yeast, you can also have them crap out way before that point too.

    another vote for turkey fryer biab. I use a sump pump for running water out in my garage when I brew, if you have a generator you could toss that guy in the creek with a hose and it would take care of that issue.

    yea I am recirculating the mash. 72% is my very consistent mash efficiency. It appears stirring / not stirring has no effect on efficiency numbers with my system as suspected. At least with the 10lb grain bill. Dough balls might become a bigger concern at bigger gravity beers with like 15-20lbs...

    water chem / ferm temps / bad process in general / poor sanitization all can lead to consistent off flavors batch to batch. My vote is you have harder water and are not doing anything about it but we need more info to help boss.

    Lol just got 72.6% by adding water to the mash and not mixing. Time to move some hoses around and edit processes! 90% Automation here I come haha

    I always boil off about 1.5 gallons per hour doing 5 gallon bathes. Never had a taste issue that I have noticed. Why is bigger boil off an issue?

    I bought a real kriek the other day it said they use 400g/L cherries to lambic. but I would probably start around 2lbs a gal and go up from there. 400g/L is a crap load of cherry, it tasted awesome though.

    15oz of hops per 2.5 gallons? I would assume ROI on that in minimal and you could probably go close to half that.
