    If they smell okay then use them. The alpha acid (AA) levels will have decreased quite a bit, but they should remain usable.

    Adding a campden tablet to your water while it's coming up to strike temperature will eliminate your chlorines and/or chloramines present. Super simple and inexpensive.

    A quick glance at the hop varieties sounds pretty good to me. I think you'll have a tasty ale on your hands in a month or so.     That was my thought, but it seems you're already fine there... I might be inclined to agree with @Norlz about pitching 2 packets, especially if your OG was 1.075. If that's not the issue then like @VikeMan mentioned it's possible the recipe is slightly differing from your expectation?

    Show us your Kegerator

    This is my first kegerator and kegging setup. She's seen 4 corny kegs worth of brews so far and is keeping up like a champ. I drilled and mounted the tower myself and got the fridge on CL used.

    What's in your fermenter(s)?

    My first ever mead. 3 gallons. Should clock in around 14% ABV. I'll separate each gallon out for a secondary with three different fruit versions. Crossing my fingers!

    Do brands of Kegs matter?

    I have the same ones. I tried to find used ones for a good price, but after shipping most were nearly the same price as a brand new one with shipping included. I haven't had any issues with mine at all.

    Tried BeerSmith and didn't like it. Used Brewer's Friend. The website works okay. It's a little slow making selections, but sometimes when I return to a recipe it adds random malts and stuff. Not down with that. Tried and purchased Brewfather and love it.

    Oh dear lord you're right. I used one last time and I FORGOT THIS TIME. Ugh. Haha well I still didn't see any airlock activity but we'll see how it is after the conversion. Thanks! 6 brews in and I'm such a noob still! Edit: My sour clocks in at 4.1% and the IPA at 6.25%. Never stop learning haha!

    That's what I thought too. Used the same style of yeast last time too. I have a refractometer with auto temperature calibration. I double checked with one of my sours I just kegged and that was fine (FG wise) and test with my distilled water to be sure. Seems fine.

    I'm originally from Riverside and I guarantee there must be a homebrew club in the area. Facebook would be a great starting point. Try asking your LHBS. That's how I found out about my current local group.
