Look into acidulated malt. I use acid malt and hit mash ph most the time. Then I add lactic acid to my sparge water for its ph adjustment. Works real well for me. I use the ez water spreadsheet for calculations
+1 on bringing down that bicarbonate. The lighter beers that I brewed before I got the bicarbonate below 65 all had astringency if I sparged. THe BIAB beers were OK. YMMV
Ive never used it either. I have had Bry97 and WLP400 take this long to take off before. Id give it 24 more hours before pitching something else. Hope it takes off for ya!
I stopped pitching lager yeast that warm due to esters. I would have to warm it up for a whole week for the yeast to clean up. Did you let the temp rise a few days when it was about half way done fermenting? Did it lager a few weeks before you put gas on it?
Update. I had no airlock action because one of the rubber grommets was cut and leaking. Planning to use keg lube on the grommets this weekend for the second use. Going to keg whats in it and rack onto the trub of this beer and shoot for a 50 deg ferment temp.

This happened during my first lager. A phone book I was using to tip my carboy for racking into my bottling bucket fell into the bucket when the carboy got down to about a gallon. Thought for sure it was ruined. Came out fine.
