Who leaves the lid loose on the fermenter

I have had basically the same experience as Ozzfest. I use a roughly 43L food-grade plastic bucket with a loose-fitting lid. I've left beers in it for up to three weeks before racking to a carboy with an airlock and I've never had an infection or contamination problem. That said, I use it...

Forgot to cool wort after boil. Still okay?

Hey, a fellow Vancouver Brewer. Welcome to the hobby! Strathcona PA is indeed a great recipe, and Dan's is probably the best LHBS in Canada. There's no way to know, but you want to hope that the your wort was too hot and killed the yeast when you pitched--because otherwise you will have...

    Beer is so good

Thanks dudes. Chin Chin right back at you. And yes, the little man is definitely a brewmaster in training--although his mother keeps giving me grief for seeing if he will still fit in the brewpot.... @msa8967 I'd post my recipe for a Pacific Pale Ale, but I have to say that I don't really put...

    Is a bottle brush necessary?

Well, if you can't see any mold after the chemical and water blast, how will you know you are done brushing? It sounds like you're just fine. I find the brush handy from time to time, but soaking and rinsing does all the heavy lifting for me. I say: RDWAHAHB. Go ahead and bottle. Congrats on...

    BeerSmith Worth $$

To get your strike temps right, to adjust for efficiency, to get mash and sparge volumes right, to adjust ingredients in case you're HBS doesn't carry them, to adjust AAs in case your hops are not the same as the recipe--just off the top of my head. And that's before you start seriously tweaking...

    Beer is so good

The thing about homebrew that I recently learned is that there's always your next brew. Really gives you a good incentive to drink the stuff you've got!

    Beer is so good

I hadn't brewed since April of this year, and the beers I was drinking then haven't turned out so well: some high temp fermentation off-flavours in an ESB, a bad recipe Kölsch, and some grassy dry-hopped IPA had put me off my own damn homebrew. Then my son was born (which was awesome) and I was...

    6 Perlick CO2 Regulators w/Mounting Plates

So, would these all attach to one CO2 canister? Am I right in thinking this would be for a three-keg setup, each with its own custom pressure and a single CO2? Would you consider shipping to Canada through USPS?

OFFICIAL Kate the Great Russian Imperial Stout Clone

You'll probably have better luck asking a standalone question in another thread. Not a lot of people check these threads for discussion, and your question is pretty specific. I don't worry about ph levels at all, for example.

    Apologies for my last thread.

Don't sweat it, BenVanned. I knew what you meant right away--some others did not and made some different assumptions: such are the pitfalls of an internet bulletin board. Now I think folk are just having some fun.

    Apologies for my last thread.

No silly. We whip across the border and buy it from Target at 1:22 AM on the Friday for $3.02 USD, traded at par in reputable American establishments everywhere across the 49th parallel. Then we fill out our sales tax refund applications and get the hell out of dodge. Then we make Liquid...

    Apologies for my last thread.

Yes, but we celebrate in October by giving the Iroquois a bag of Canadian 2-row and a free hops bale. Measured in kilograms Then we make beer and play hockey. I don't think Underdog is involved at all.

    Apologies for my last thread.

This is why Canadians have Thanksgiving much further away from Christmas. Yanquis get so uptight as Black Friday approaches. I hear the first demand of Occupy Portland was one extract or all-grain kit per month for the 99%. Now that's democracy.

    Seattle, WA trip

Not beer related, but best pizza I've ever had is served at Serious Pie. It's close to downtown & Pike pl. Market on Virginia St. You could always drink beer with your pie. It's a bit pricey (for pizza), but worth it (imo). No reservations!

OFFICIAL Kate the Great Russian Imperial Stout Clone

Thanks for the replies--I'm intrigued at the idea of adding dark malts half way through the mash, but unfortunately that's already out of the question. I've got the malt already (sans carafa), and it's all mixed in together. @smagee The recipe does call for carafa 3 special (dehusked), so am...

OFFICIAL Kate the Great Russian Imperial Stout Clone

I can't help you on pH levels, but maybe my bump can. My question is a similar to one posed upthread about the lack of affordable Carafa III on the West Coast of Canada. Has anyone made it without the Carafa? As far as I understand, it just adds colour and no flavour, so I'm thinking about just...

Will you ship by USPS to Canada?

    5 gallons down the...

I dropped a carboy about six inches due to misplaced confidence in a carboy handle. Adios to 6 gallons of Oktobefest ale and hola to a few hours with a carpet cleaner. Anyway, brewer solidarity. Hang in there bro.
