Got a little closer to having everything ready. Built my table but it turned out to be a little tall on the casters so I'll be removing those for a little while. Got the rest of my stuff on the way and need to add one more pump to the system. Then it will be a matter of mounting the control...

    ECY34 "Dirty Dozen"--now what?

I've wondered, ever since I heard him say that, about leaving my bretts out of the fridge. I wonder if that would work. This may be a good candidate for a 1 gallon batch then use the dregs for something. The blend will be off kilter but I'm sure it will still brew something nice after the...

    ECY34 "Dirty Dozen"--now what?

Well I found a vial of this from last year in my fridge. Wonder if it's still any good? I don't know how I over looked this. I never developed a recipe is probably what happened.

Anyone using Better Bottle "Dry trap" airlocks for long-term aging?

Not bad at all really. I'd like to give some a try for sure. I may pick up a couple.

Anyone using Better Bottle "Dry trap" airlocks for long-term aging?

I've heard they can be the best. But I've also never seen them below $50ish. Where are you seeing the total package for $30? I'd probably buy that. Usually that's just one of the pieces and not the whole system.

Here's some pics for reference. Jay has the distance perfect for the two TC couplings to work great. These even work with the false bottoms from Bru Gear! Well done sir. I'll be ordering some more things from you. I'll need need something like this for my return circulation on my HLT. Thanks...

Dip tubes came in and look great! You did well on the design Jay! I have another idea of something for the return port/whirlpool that I'll email you about. Thanks again for letting me know you guys were doing these!

    Trying to understad Saison/Farmhouse

Saisons were not always brewed in the fall or winter. In fact, tons were brewed at the end of the summer to be kept for next year. It's very possible that they had those high fermentation temps on their saison. Lots of them were brewed to be kept and then dry hopped to "freshen" them when the...

Boom! Looking forward to getting them in. I'll have to start assembly of my whole system when I get back from Chicago this weekend. Then all I'll have left is my HERMS coil. Ready to start firing off some brews with it!

    Question About Wyeast 3278

It will still have some viable things in there. The brett in there will still work. It could take a few days to start up. I just pitched a pack of Roeselare into a 1.044 lambic style wort and it took 4 days to show any activity. But, I did get a noticeable sourness in the flavor/aroma. Now...

    Is My Lacto Brevis Dead?

Although it has been said by White Labs that it will ferment, when I pitched two vials of Brevis into a 1.034 wort, it did not get below 1.028. It did get sour but I had to finish with another yeast. If it get's down in pH enough or if it gets sour enough to taste, finish it with a clean yeast...

    ISO wyeast 3726

Glad to hear on storage. I ended up with 5 packs of it and have only used one from this last run. I plan on growing a bunch up and storing it to keep using for a while. I want to mix this with the wit yeast and maybe some local stuff for my house saison strain.

    ISO wyeast 3726

My experience with this yeast as been below 75F and I will agree. It is slightly mild at that temp. I'll have to ramp with the next batch. I'm combining this yeast with a witbier yeast for my next Saison as an experiment. It was between this and 3724. I may do a split batch to see which...

    WLP644 -Brett B Trois

These are my results with WLP644. I plan on using the new Vrai to see if it is different. I found the Sacc version needs a substaitial hop presence to keep the beer fresh for a while. I even did a WLP644 beer with Brett Claus. and after a couple months in the bottle all that remained was...

I haven't received mine yet, so I'm assuming I'm getting the new one. How is yours working as far as having the ports on top? Any issues with a pump? I know it shouldn't but just looking for hands on feedback.

Awesome. I PM'd Jaybird about theirs to see what it would be like. I'm just ready to get to brewing. I won't really be able to use the full effect of the kettles yet without HERMS but I'd like to have pick up tubes so I'm not leaving behind a ton of wart/liquor for sparging.

I know the feeling. I'm trying to be patient as it's a new company but I have rolled the idea around in my head of selling the kettles and preordering SS Brewing kettles. Their new Mash Tun Kettle is sweet. If they do it in 15 gallon I'll probably still get one of them. I'm still able to...

I guess I'm going to go this route. I've been trying to wait patiently on dip tubes and my HERMS coil. How much father is your ball valve sticking out now? I'm worried about that with the racking tube option. I've had my kettles 3 months now. Still no word when I'll get the coil. I'm...
