    I have been using one of these for 10 years. Solid unit. As for when to test. I check 15 mins in. Usually my pH is within a few thousandths of my calculated so I don't have to adjust. But if needed I usually only end up needing a smidge more acid anyway.

    Yep, got rid of my bottling bucket years ago as I rarely bottle anymore, but the few times I do I do this keg method. You will also be just fine adding your sugar solution to your bottling bucket/fermenter and giving it a gentle swirl, waiting 10 mins, and then bottling

    Yes, it will eventually go into solution. If you have solid candy, you have a pretty strong concentration gradient, unless you have somehow hit the saturation limit, you'll notice that because you will damn near be pouring syrup.

    Depending on your timing, you can always transfer your beer and priming sugar into your one and only keg and bottle out of there using a disconnect, tubing and a bottling wand.

    If you got water in it you can try just baking the metal probe (leave the connector out) at 250F for half an hour or so. Then test again. Was able to recover a similar probe that way
