    Kriek Style Mead

I racked this mead into secondary this morning and I've updated the original post with the procedure and some tasting notes. It's excellent already!

    Kriek Style Mead

Well, the OG came out at 1.046, and if that drops to 1.000 (which I expect it to), that comes out to 6.1% ABV before the cherry juice and priming sugar. Regular lambics routinely finish at 1.000 or around there, so I'm not to worried about it being too dry or "thin" by comparison, but we'll just...

    Kriek Style Mead

Hello everyone, I've been brewing beer and making wine / mead for a while now, and I've decided to do something a little different. Lambic meads are a bit of an unexplored front as far as mead making goes, and after reading this great post I'm ready to try it...

    Fermentation Issue - Advice Needed

Well, thanks for the input guys. I'll probably sit them in a tub to contain any mess that might happen. I have a suspicion that I'll just end up having a sweet beer, but it's just nerve racking. I won't be having this problem again, that's for sure.

    Fermentation Issue - Advice Needed

Okay guys, Same beer, different problem. I bottled this beer today into 12 750ML brown Belgian bottles with silver Oxygen absorbing caps. The expected OG was 1.102 and expected FG was 1.023. The measured values were an OG of 1.110 and a FG of 1.035.... Should I be concerned that the bottles...

    Fermentation Issue - Advice Needed

Hey guys, thanks for all the advice. The blow off tube I rigged up worked perfectly. Fermentation has since settled down substantially, and its now back under airlock. I'll keep this thread updated with it's progress!

    Fermentation Issue - Advice Needed

I'm at least attempting to control temperature. It's 68F ambient right now, and unfortunately that's the best I can do to control it

    Fermentation Issue - Advice Needed

Yeah, that would probably work, but I don't have your traditional blow off tube per se. I just connected a racking hose to the stopper and have it submerged in sanitizer to have a makeshift version. I hope it doesn't clog..

    Fermentation Issue - Advice Needed

Hey guys, So here's the deal. On tuesday I brewed up a Belgian dark strong ale. It came out at 1.110 (whoa), and pitched wlp530. It's 3 gallons total in a 5 gallon better bottle. It's really getting vigorous now, with krausen getting up to the top of the fermentor, and I just have a piece of...

Wild Brew. What Do We Have Here?

Update: I didn't have a small secondary, so what I did was transfer to a 5 gallon Better Bottle with 1/2 lb invert sugar / yeast nutrient. Hoping that a restart of fermentation will force all the oxygen out from the headspace. I'll be updating this thread with pictures of the new activity. My...

Wild Brew. What Do We Have Here?

Thanks for the advice. Do you think I should step up the gravity when I move it over?

Wild Brew. What Do We Have Here?

Hello everyone, So recently I decided to try my hand at Lambic brewing with some of the local critters near where I live. I'm pretty new to this concept, so if any of my terminology or procedures need work, please correct me. Basically, what I did was make up some low gravity wort and set it...

    Dunkles Weissbier Midnight Dunkelweizen

Yeah, I'd have to imagine that would work well. You may need to use more midnight wheat to get as dark as mine at 46.75 srm however. My OG was 1.057 and it went down to 1.014. I hope you give it a shot, and if you do, let me know how you like it!

    Keg Dispensing Issue

Okay, thanks guys! I'll give it a couple days and then try running a little out to get rid of the junk. Hope it works and I don't lose too much, lol

    Keg Dispensing Issue

Hello everyone! Recently I put together a Dunkelweizen to have on tap for this spring. Yesterday, when I siphoned it into my new 5 gallon ball lock keg, it held pressure perfectly, but it wouldn't pour through my tap! I checked everything, and figured out that it was clogging on the output...

    Extract Dunkelweizen Recipe

Thanks for the input guys! Yeah, I think I'll switch to the liquid yeast and opt out on the banana extract. I'll post up the final recipe, results, etc on brew day

    Extract Dunkelweizen Recipe

Hello all! Recently I bought a kit for a hefe, and I decided to take my own direction with things :drunk:. I love dark beers, and I had plenty of extra ingredients on hand, so this is what I came up with: 6 Lbs Wheat LME 2 Lbs Dark DME 8 Oz Midnight Wheat Malt 8 Oz Chocolate Malt 2 Oz...

    Buttery Traditional Mead

Hello All! Lately I've been obsessed with buttery MLF'ed Chardonnays such as Toasted Head and Kendall Jackson. So I started thinking (which is always dangerous) about how I could apply this to a mead. Toasted Head is barrel fermented, which adds some very nice character which I'd like to...
