    No offense Hobo but this paragraph is very wrong. The 'alpha' and 'beta' are reversed and you can't really 'saw' the mash temp like that (well, you can...if you like spinning your wheels). Once you increase the temp much above 150-ish the beta-amylase starts to denature and doesn't work...

    I'd certainly be game for that. But I'd be getting the good end of the deal, I've only made 2 meads and the first one is only ~3.5 months old. I'll probably enter them in my club's mead-only competition in May next year, so I should know how well it stacks up.

    Just curious, but what evidence (other than anecdotal) do you have that pitching at the same temp is best? Are you basing your belief on any scientific studies that prove this or just because several books said so?

    I'll be shutting up now WW.:) Oh but lemme add this; I thought I had read that there is a bunch of phosphate in malt, so much that it dwarfs any amount we might be adding by pH adjustment with phosphoric acid. So adding a bit of phosphoric shouldn't affect the Calcium content much.

    Whichever one had the scantily clad Princess chained to Jabba was the best. Yea, I'm shallow like that. Haven't seen all of the 'new' ones but did not like what I saw. Figured it was just because I was older...and no scantily clad Princess.
