    WY2565 has a somewhat "vinous" wine-like complexity to its ester profile which I find more pronounced in the higher 60s. That's probably what you're not liking. Personally I love it and I use that yeast a LOT.

    1 gallon batches

    I recently fermented a 2-bottle batch in an orange juice bottle. Mash and boil were done BIAB-style in an InstantPot. Turned out good enough that I'm going to be scaling it up to 1.25 gallons soon.
