    I am about to get a glass carboy for some secondary use, but after all the stories, I will never primary, nor will I do anything but siphon cold fermenting liquid into one. I hate the idea of even moving them around.

    High Gravity beer can be notorious for taking their time. Belgium strains can be notorious for deciding to take a nap, stop fermenting or start back up again provided thee are fermentables present of course). Adding a neutral bottling strain might help, it is what a large number of Belgium beer...

    Most are cold steeping it, in a traditional "brewed form".. Whole bean will probably not extract the flavor you are looking for. Also, I think most are adding it as a very late addition, to further avoid tannins.

    I had to reread your post a couple of time to make sure I was seeing the right thing. You say you got 4 gallons but your boil and target say 10 and 8,also I dont see the hops... If I can assume that you modified the recipe and that you have some appropriate balance of hops and I just go off...

    Sorry, I didn't read your post carefully. No sir, I am BIAB single vessel. I would go for a 10 gallon set up. Your work into a 10 gallon set up will be more, but then you are "future proofed" (haha, at least for a while).

    Propane is your initially cheapest cost of admission. I get around 4 batches of beer per tank.
