    Fruit meads

    Well, the sky is the limit when it comes to mead, so I guess the question is more about what fruit you have local to you and whether or not you are opposed to using concentrates, like Vintner's Harvest, etc. I just started a shiso/plum/jujube mead.     This is our 2nd batch of Erlking Mead. It seems to be clearing nicely and we are hoping to bottle it sometime next month. This was started last December. Apple juice, cranberry juice, yaupon holly honey, cranberries, ceylon cinnamon, allspice, cloves, and star anise.

    Well done! I haven't done a Honningbrew yet, but our BlackBriar is Blackberry/Elderberry mead. It turned out fantastic. Primary was a 50/50 blend of blackberry and elderberry juice. In secondary I added elderflower, dried elderberry, and strawberry. It's the best mead I've made so far.

    Probably a good idea. The honey I used is very strongly flavored. We have 10 bottles of the original left, and 6 gallons in secondary. The first batch we made cleared very quickly. This newer batch is still cloudy as ever, but sitting at 1.00. I will give it another couple of months...
