    Yeah I have heard that too. I think Taprite replaces them for free though. I have been really pleased with the Governor. The knobs are all metal which is really nice. I don't have anything bad to say about it.

    I would do 30 PSI for 36-48 hours and then turn it down to serving pressure. It might not be optimal by Saturday but it will be mostly carbed.

    I believe the overwhelming majority are going to tell you to go with Taprite. For what it's worth I have The Governor and it has been great.

    I love it. It is THAT good. It is one of my favorite varieties of hops. I buy it by the pound to save some money since I brew this beer so much.

    Yeah BeerSmith calculates like 37 IBU from the 30 min hop stand. If you try this recipe let me know how it turns out for you! I have a batch fermenting right now and I am trying out Clarity Ferm for the first time with this batch. I will post the results when it is finished.

    There is more like 80 IBU in this recipe, I had the hop stand set for 60 min in BeerSmith by accident when I actually do a 30 min steep. There is a total of 4 oz of Citra used in the kettle in this recipe and 4 oz used to dry hop.

    I don't think you really need to worry about the pressure with transferring. It takes very little pressure to move a liquid like that especially if you just use it to start a siphon for you.

    It can easily be expanding gas. If it is just in your basement and not in a fermentation chamber the temperature will be cooler at night than in the day, even if it is only a few degrees.     Whoa, what is the point of having it directly on the bottom? If you have it on the side with a dip tube would will be able to get it all of the wort out, no problem.

    Do you just mean you want to have a valve on the bottom of your kettle? That is completely fine and actually preferred for most people. IT won't really affect the boil but you just want to be sure to use valves that can handle the high temperature.

    I agree that you shouldn't rack from a 5 gal to a 6 gal. The extra headspace is just asking for trouble. If I were you I would skip the secondary and just bottle.

    It should be done after that amount of time. Airlock activity is not how to check for yeast activity. If the temperature rises the air inside the carboy expands and comes out of the airlock. Generally, you want to take a gravity sample when you think fermentation is complete and then another one...

    It is most likely the yeast dropping out of suspension. Since yeast are a creamy white color they make the beer appear lighter until they drop out. If you shine a light through your stout you will see that it has a reddish hue.
