    Most of mine start within 6-12 hours. The exception so far has been an OG 1.100 Imperial Stout that took about 30 hours to show any signs.

    Fermenting wort tends to heat up by a few degrees over the ambient temperature. Any time I've kept a fermenter in a water bath, during fermentation the wort is 2-4 degrees warmer than the water. They match once fermentation completes.

    I don't think there's a risk of breaking the bottle - I assume you would see some wear to the glass before anything bad happened. The red gasket will wear out long before anything breaking.

    I'm on my fifth brew (Scottish 90 from NB) currently bubbling away. The previous four have all been really good. My first was a Blood Orange Hefe, which was really something special. Everything since has been really good. I think I've gotten lucky so far.

    Swing tops hold carbonation, but the rubber gaskets need to be replaced about every 6 - 8 uses. Were they heavily used swing top bottles?

    Oh yeah, didn't even think of that. I just got lucky and happened to brew my first ever beer the week that blood oranges came out. I've seen a couple of threads where people had good luck with other citrus besides blood oranges - tangerines and clementines if I remember correctly.

    Utility bill adjustments for brewing/consumption

    350 gallons per year is about 47 cubic feet of water per year. My city charges 2.99/ 100 cubic feet of water, and 3.99/100 cubic feet for sewer, so about $7.00/100 cubic feet total. your adjustment would about $3.50 for the whole year if you lived in my city. Probably not worth it.
