    Fat Tire Replica!

I have half a batch in the fermenter. Its been 2 weeks, I am going to let it sit there some more. I have never had it. Requested by my sweetheart. So far, so good. I used this recipe, except I toasted 4 kg instead of 4 lbs. New scale.... Homebrewing Recipes and Articles The other half is...

    I think this is overlooked

Sanitizer to wipe the mouth of my starter, or flask, or clean my thermometer before I put it in the beer and a few other uses. About $2.00 for 50 or 100 available at any drug store. I wait a short time to let the alcohol flash off. David :)

Imperial stout still outgassing or infected?

You brewed a huge beer and it tastes funny after 3.5 weeks. Sure it does..... Gassing from the airlock is no big deal. Keep with your schedule. David

Pitching equal yeast amounts into 2 carboys?

Wyeast says they have 100 Billion cells in an activator pack for 5 gallons. They also say its pitchable from the pack. You could surly pitch 25 billion cells (propagator) in to 3 or 4 quarts of wort. Shake the starter as often as you can. I just checked with Mr. Malty. We don't agree...

Pitching equal yeast amounts into 2 carboys?

You have to make twice the starter anyhow, so splitting it is easy. My flask has numbers on it. You could measure what ever your starter is in and make a mark 1/2 way. David :)

    Exploding Fermenter

Brewed an Oatmeal stout Saturday. This was 24 hours later. Its now been 48 hours and the gravity is 1.021. I pitched at 68. Its now hovering around 71. AC is on full tilt. You should get a better beer if you pitch at a lower temp David :) Here are more pics. 24 hours after pitching...

    Daym this is good!

I am sitting here drinking my house ale. It came out perfect, just what I was expecting. I took 9 or so years off from brewing for a lot of reasons. Now I am trying to get my life back. I got back into brewing a few months ago. The first batch I made was "yellow Beer" or my house ale...

    Lag time

There is about 11.5 ot 12 gallons in the keg. I keep a pan lid on it. The conical has 5+ gallons of fat tire clone that is done. I have a 5.5 gal cube full of unfermented house ale. I'm going to keg what is in the conical tomorrow, sanitize it, crop the yeast from the keg, put the yeast...

    Lag time

Not a question, but just a statement. I have read of lag times up to 72 hours on this board. Yesterday I brewed an Oatmeal stout. Starter was Wyeast 1.6 litres 1084 on a stir plate for 2 days. I pumped Oxygen into the ball valve at the bottom of the keg for 5 minutes, no stone just pure...

Just have fun. Be prepared which you are. David :)

Do i have too much unfermentables?

I don't think racking would have hurt a thing this time since you pitched a new batch of yeast. Rack beer, pitch yeast.... David :)

    Mmm looks good to me!

    Double batch Saturday today

Single batch of Oatmeal Stout. Same as the last batch except a little "bigger". Instead of 2 lbs flaked oats, I used 3 and 1/4 pound more chocolate. Looking like 85% eff right now. My record holds of never a stuck sparge. First runnings were almost like molases! First wort hops smelled...
