So what did you use for hops? David :)

    2 sacc rests @ 143f/158f --VS-- 1 @ 152f 60min

George fix from the Home Brew Digest used to talk about a 50*,60*, 70* step mash. Then he changed it to 60* 70* schedule with the best luck. That would be 140*f, 158*f rests. It works for me. I have a fired 1/4 sanke mash tun. That is ALL the grain I can fit in it. 1 qt per pound of...

    2 sacc rests @ 143f/158f --VS-- 1 @ 152f 60min

I make my oatmeal stout with a 15 minute rest @ 145*F. Then I ramp up to 155? give or take. Last batch I got it up to 161, but I checked for conversion and it was done. I stir constantly while raising the temp. On its way up in temp, I could feel the mash loosen up. No stuck sparge and I...

    US-04 instead of US-05

Just brew it.... I had good luck with S-04. Finishes quick and drops right out. I did not hydrate it, just sprinkled it on the 68* wort with added o2. The beer was a boddingtons clone. It was :( good. Not much to say about esters, I haven't figured them out yet. David :)

    Online Homebrew Store Warning

I had a 25' 1/4" home made one. I decided to upgrade, I priced copper locally and found it cheaper to buy the chiller. I have used it 4 or 5 times. The hose does leak. The clamp is as tight as it will go. A different clamp or a few turns of electrical tape to make the hose bigger under...

    Transporting Wort

Those plastic cubes or "winpacks" used for no chill brewing. My friend comes over, we brew 11 gallons. I put his half in the cube HOT, he takes it home and ferments the next day when its cool. David :)

    Too much 02

Sounds like you did it right! A proper size starter and o2 make for a good ferment. David :)

I drew this off my conical toinght

I was a little surprised, I drew a little bit off the first day, I got nothing. I got about 8 ounces of trub on the third day. This is the fifth day. This is second generation, I was not planning on keeping it, but it shore is purdy. I did sanatize the cup and fitting. I even sprayed the...

    Double pitching a starter?

I would make a small starter to proof it. If it takes off, put it into a bigger starter and away you go. If not, nothing lost. I have used boiled water and brown sugar just to see if the yeast is alive. David :)

    Cell count from yeast starter

AND Why does it say you need 2 vials of yeast even for a stir plate. Just a thought.... David sitting here having an ESB under the air conditioner. :) Edit: Saccharomyces, I have read what you said a few times in books, but you write it so I can understand it. Thank you

    Bleeder valve

I hook up the gas to a chilled keg. Set to 30 psi and shake for 4 minutes. Put back in fridge. The next day pull the relief pressure valve on the keg till it stops. Set your gas to serving pressure. Draw a pint to check carbonation. Should be close or even right on. There is a sticky...

    Fly sparging and time

You are adjusting your sparge time by what it takes to make the thing spin. You need to adjust the sparge flow at the ball valve (out from the mash tun) to take 45 minutes. Its worth it. Maybe only 1/2 hour for a 5 gallon batch. I just lay the hose from the HLT on the grain bed. Its...

    Ramping up fermentation temps?

Just a thought. Warming up the yeast make them work faster. So maybe they would clean up better if warmed up? David

How NOT to make a starter; a cautionary tale

I had bad luck boiling the stir bar. The bar got hot and the wort boiled off of that making a lot of small bubbles. Next thing the flask foaming out the top and all the wort was not boiling. This was on an electric stove. Now I spray it with star san and gently drop it in when cool. David

    The good old days

My first batch after a long hiatus of brewing got infected. It was my house ale. It turned out to be a lambic..... I still have one PET bottle in the fridge. I'm a little afraid to open it. Its been 4 months. I have made 50+ gallons since.... David

Thoughts on: WLP007 Dry English Ale Yeast

I used Wyeast 1007 for about 5 years. It makes for a good clean beer. It forms a good cake of yeast on top. If you draw the beer out from under it Its pretty clear. If the yeast cake falls in the beer, its cloudy for what seems for ever. For a 10 gallon batch I used a 3 quart+ simple...

    Big starter with no o2

Mr Malty sez You need 1/2 as big of a starter if you use a stir plate. I see I need less than 1/2 the time. I used to think a stir plate was a $900.00 toy. Then I bought one for forty bucks. Used it twice. Its the only electronic part of my brewery. I have used o2 for a long time. I...

    Big starter with no o2

I had a cube of my house ale. Starter was from washed yeast 1.2 litres for what ended up to be 3 days on the stir plate. I poured the wort through a strainer to catch the hops and trub. It splashed A LOT. I had a head of foam to the top of the fermenter. (2" or one gallon). I pitched the...
