It will be ropey for a bit but it has passed in the beers ive used it in and they taste fantastic. Excited to get that cantillon blend in my next sour barrel beer.

Changed my mind, not bottling tonight. This is a tad too sweet for me, still good.

Sample of my 9.5% naked stout before bottling. This is the portion that didnt make the barrel. Pretty delicious. Ended at 1.030 like i hoped for.

Might as well be haha its the brewers office. A majority of my days end here. Not a bad perk.

Technically home distilling is not a crime in all 50 states right now. Feds wont come after you as long as its being used for consumption and you arent selling it.
