    Fermenting?

Some of the very best beers are the forgotten ones in the fermenter, way back in the garage :mug:

    Finnings

I don't use it and I find that it does not do anything to the flavour. All it does is help settle the solids and make your beer clear. I might be crude, but I don't even pour into glas/jug anymore, I just down it all with all its goodness.

Sweet taste: Did you do the hydrometer check? Sounds like residual sugars. My very first AG was very sweet, I only got it down to about 1035ish, target was 1016, so that was way off. Resulting in a very sweet beer with banana flavor (yeast esters) to boot, so in my case it was not fermented...

    priming questions

We use Rotokegs a lot, we bulk prime it with sugar and top it of with a co2 cannister, similar to the one you use for sodastream.

I better check my facts next time I bring up a fun fact :) Thanx for correcting me.

what is the most "water conserving" method of cooling wort quickly?

We have way more energy than fresh water, so using ice seems like a good idea to me. Freezing containers and reusing them in what ever cooling system you are using.

Did an infected beer make me sick?

The main reason so many poor people in london surived the black plague was because they drank beer instead of the more posh "fresh water" that was around at the times. Fun fact about beer #1

    Brew books

I started out with Brewing Lager by John Alexander and it has stayed with me when all other books have failed to provide me with useful information. It is an easy read with good explanations and a few recepies.

Bulk priming test turned fly trap

I am currently testing the Krausen Wort method out for bulk priming and the first test I had going I put on the kitchen bench so I would remember to give it a good shake every now and then. This morning I found that a few flies had gotten in there, four to be precise. I didn't close the lid...

    The fun begins for beginners

Nice, I did enjoy the read and recognised some of the "lessons learned" from when I started out :) Keep experimenting, thats what is keeping it fun.

Looking for feedback on my first Brown Ale

To me, it looks like its a lot of coffe malt, I would maybe break that into chocolate malt/coffee malt 50/50? Im still new at this, but I find the coffee/chocolate malt combo is a good way to round a dark ale off.
