    OK, got my pump today and I am using the dimmer in post #132. When I hook everything up the dimmer does not do anything, the pump runs at full speed. If I change the connections the pump does not work. Anyone use the dimmer from post 132? What am I missing? Thanks very much.

    Don't want to sound stupid but 'boil some water'....roughly how much water to add to a pound of candi sugar when boiling down? Just worried about keeping it semi liquid while cooling to a temp acceptable to adding to the fermenter.

    Has anyone ever tried to use a brewed tea as opposed to water when steaming the rice? I cooked (3) 2 cup batches and used a brewed hot tea for the liquid in 2 of the batches. We'll see how it turns out in 3wks or so. The rice tastes great.

    With my experience using those only in aquariums, they do get dirty and can also stall out. I find them finicky over time but you won't be running continuously so you might not have issues.

    Direct fire or insulate sanke for mash tun?

    I guess I am lucky, I have great luck with a wrapped keg, also when I use a 7 gallon pot on the stove for 3 gallon test batches, wrapped in 2 towels, I hold steady. Did a 3 gallon batch last night, went from 154 to 152 during a 50 minute mash. I will quietly hope this trend stays steady.

    Sorry, not trying to be a dick at all. Just honestly seems dangerous. I could see at least a lid blowing off, or at worst a seam coming loose. On the other hand. If you find the right bucket/lid and it works, you could be on to something.
