    Wort chilling

    I just use RO ice straight into the bucket to fill up the 2-3 gallons that were not boiled in the initial wert. Haven't had a problem so far.

    I brew in Phoenix. And what I do is for the 2-3 gallons I need to fill in the fermenting bucket, I just use Ice instead. if you live in the valley you more than likely are using RO water to brew.     Why not just use regular ice? It's something like 8lbs of ice = 1 gallon of water. Pour the wert on top of some ice, you can add a little more to get your total bucket to 5 gallons. It cools my wert down to a good temp in no more than 15 minutes.
