    The acid blend is a mix of citric, malic, and tartaric acid. I imagine there'd be enough citric acid in this recipe from the lemon and orange juice that you might not want to add more. I'll have to look into the head retention thing... very interesting.

    Boiling nettles prevents them from stinging. Perhaps its in there to balance the acids? I've read somewhere that a 3:1 ratio of lemon juice to cream of tartar provides the right balance of acids for baking applications.

    I don't believe so. Cream of tartar inhibits the formation of sugar crystals. My guess is that its there to keep the sugar from bunching up and remaining accessible to the yeast.

    You might try using tartaric acid. Maybe half the amount? Cream of tartar is a 50% neutralized version of tartaric acid..so that might work. It should be available in your LHBS.

    I don't think you need to boil any longer than you want; as long as you have your hot break, you're good. As I'm sure you know, the longer you boil, the more more you drive off hop aroma and extract bitterness..up to a point. If you really want hop aroma, make an addition at the knockout...

    If only I had one... it's like it needs some sort of key or something. I couldn't find anything that fit in there well enough that I could apply enough pressure to get it to budge.     Okay, I was given this Anheuser-Busch pony keg the other day. It's got two of these valves on it. One on the top and one on the bottom side. It also has a bung on the side. I initially thought it was a U - type valve system, but I'm not so sure. And I can't figure out how to get that retainer...
