    Freeze grain?

    I'm certainly no expert and fortunatley haven't had problems. check out post 5 in this thread. https://www.homebrewtalk.com/f36/stupid-weevils-grain-beer-132413/ Apparently freezing the grain for a few days or more will kill the weevil eggs.

If you search "how long do milled grains last" you will find more opinions than you probably want to read. For 3 weeks you'll be fine as long as you don't store in a warm place.     For 3 weeks I wouldn't worry about it, especially if they aren't ground yet. If they weren't sitting at your house, they'd be sitting somewhere else. Freezing won't hurt if it makes you feel better, but really not needed in my opinion. I've had kits sit longer with no ill effects.

    "it depends on what you like to drink" Yes, this. Just pick a style you like. I did the Alaskan Amber clone from Austin and it was really nice. Not super hoppy, or overly heavy. Just a nice balanced amber. Everyone that tried it loved it.

    I hadn't heard of these kits, but like the idea. Agree with The Bird about making this an option for all kits. Maybe just include info on what base grain the recipie is made with. Pricing does seem a bit on the high side, but had to say without knowing exactly what specialty grains and hops...

    Can I split a pack of yeast?

    I'd split it like you're thinking about. True dry yeast is cheap, but why spend 3 bucks when one buck will do. Plus if you pitch a whole pack in each gallon, you're likely overpitching,.

    How many Carboys do you own?

    I have three 7.5 gallon glass (free) and one 5 gallon ($5 on CL). None have seen any action to date. All the horror stories on here have me thinking. So far all fermenting has been in my 7.5 gallon plastic bucket. Some day, I'll use those suckers.

    2.5 gal isn't nearly enough for me.

    This sounds like a decent plan based on limited equipment. Check the bakery depts of local grocery stores. I've gotten several free 5 gallon icing buckets this way. Can be used as bottling bucket. Also if you have any interest in going all grain, keep an eye out for a used turkey fryer...

    Low efficiency with corona mill :/

    I have a corona and grind it really fine (BIAB though). I think the whole crushed hulls = tannis thing has been pretty much debunked on some other threads. I would tighten it down.

    I don't own any type of chiller at all. I just put pot in laundry tub and fill with cold tap water, and stir wort and water in tub. One the tub wter gets hot, drain and repeat as needed. When most of the heat has disapated, add ice to last batch of water. I just make sure to make extra ice...

    Moldy Bottle Bottom

    Yep. very simple. Just make sure bottle is clean after you dirnk it with all yeast off bottom. Star san before bottling and you're good to go. Noticed a few with mold before bottling and just pitched the bottles. My brew buddy wasn'r proprly rinsing after driniking, but is now:)
