English Ales - What's your favorite recipe?

There are plenty of dry Chico equivalents- WHC LAX is probably my most used yeast- that perform identically to it or 001/Flagship/1056. WHC Bond (which is a (dry) Whitbread Dry derivative like WLP007) is utterly indistinguishable IME (it was discussed briefly in another thread I think, or maybe...

English Ales - What's your favorite recipe?

I can't say I've ever got noticably "more" out of a liquid yeast than its equivalent dry strain, except for Brett and Bugs. Never been worth the effort IME.

    Low Final Gravity/High(er) abv

I thought I might have got that backwards when I posted it...

    Low Final Gravity/High(er) abv

I'm guessing it might be an unadjusted refractometer reading.

    Low Final Gravity/High(er) abv

That's 92% attenuation, which is way more than you would typically get from US-05. That's pretty much exclusively STA-1 positive (diastatic) yeast territory and would normally indicate infection, especially in a beer that's 10% crystal. Or miscalculation- how did you measure the FG?

What I did for beer today

Brewed 23L (fermenter volume) of west coast table pale. Under 4%, hopped with Amarillo, Centennial and Luminosa.

    dry-hop fail

Nothing- hops go in loose without bagging of any kind via a CO2 purged hop dropper.

What I did for beer today

Dry hopped my low ABV Saison, which has finally stopped fermenting after about three weeks. 70g (about 2.5oz) each of BRU-1 Cryo and T45 Nelson Sauvin. Smells good.

    Clarkson's $38 Pint

£10.40 for a double of vodka is ridiculous when you can pick up a 70cl bottle of craft stuff for £18.

    Clarkson's $38 Pint

Hawkstone is basically analogous to those celebrity tequila brands like 818. Average product at ludicrous prices.

    BU:GU for Choc PB RIS

I target 0.75 BU/GU for big dark beers.

Why does the RAPT Pill come with various colour caps?

For people who have multiple ones, so they know which is which.

What I did for beer today

Brewed a low ABV Saison, cleaned and sanitised both my Fermzillas, transferred my smaller volume grain stash from bags to airtight tupperware.

    What are you drinking now?

My guess is that the water in the ice has caused the lemon oils from the peel to louche and form an emulsion, which looks much yellower than the neat limoncello by virtue of being basically opaque.

How many gallons brewed in 2025

    6 gallons of low ABV Saison 1458 + 6 = 1464

    So who's brewing this weekend?

Brewed a low ABV Saison today. Pilsner, wheat malt, malted oats and malted rye. 1.032 OG, token bittering and 30g each of BRU-1 LupoMAX and Nelson Sauvin. Fermenting with WHC Farmhouse Vibes and will DH pretty heavily post fermentation. Brewfather reckons 3.5% but with a diastatic yeast who...

Is my fermentation stuck, and should I pitch more yeast?

Never understood why it's so expensive for a dry yeast.

Is my fermentation stuck, and should I pitch more yeast?

I'd have pitched two, personally. They recommend 80-120g/hL for warm fermentation of standard strength wort, so for 1.073 you'd be better off with two packs. If fermented cold, really you should be pitching at least three.

    So who's brewing this weekend?

Shall batch experiment 1 for a competition submission in July. Session Saison hopped with Mosaic and Nelson Sauvin. 3.5%, 70% pilsner with 15% wheat, 10% malted oats and 5% Light Munich. 25 IBU and a target FG of 1.004. Using a similar hoping regiment to my Brut IPAs. Fermenting with WHC...

New post a picture of your pint

Lilac Roller by DEYA from a mile or so down the road. 8% DIPA with Freestyle "Mega Terps". This is a blend of early harvest Southern Cross, Rakau and Motueka, plus Phantasm. Pretty awesome combo, super juicy candied lime and apricot.
