    BTW IronMC, I did a nontraditional saison. I went with a similar grain bill (no munich though) but added a touch of honey malt and racked over strawberries. I bittered with magnum plus late additions with amarillo and dry hopped with Nelson and amarillo.

    So here comes a dumb question. Isn't 3711 max temp range up around 77 or something like that, if you push it higher than that do you run the risk of fusels. I actually think I have fusels in my saison. I used 3711 and interestingly never went above 74. I may have underpitched so perhaps...

    Well thanks guys, I suppose I need to research how fruit can produce off flavors. It would be real good if I didn't get that hint of rubbing alcohol/acetone like properties. Looks like I will be resisting the urge to play with fruit for a while.

    Blonde Ale Centennial Blonde (Simple 4% All Grain, 5 & 10 Gall)

    Anyone played with the hops. I was looking at maybe doing a galaxy, amarillo, mosiac blonde. It seems this grain bill is a winner. I was planning to dry hop though to ensure aroma.

    Great point on the kicking back up fermentation. It freaked me out when it happened but in hindsight I should have expected it given I was adding sugars. It will start a slow fermentation that can go on for days and days. The longer you leave it, the more fruit flavor.
